Tortilla Soup
During such a cold winter, I though you might like one of our favorite recipes. This soup is very filling and fantastic for leftovers.
You need one deli roasted chicken. Debone and shred the meat. Place the meat in a 3 to 4 quart pot. Add one box of chicken stock.
To this mixture add:
1 medium chopped Onion
2 mashed Garlic Cloves
1 1/2 T Cumin
1 tsp Oregano
1 tsp Basil
2 T Chili Powder
1/2 tsp Black Pepper
1/2 tsp Red Pepper (This is optional if you don't like heat)
1 (6oz) can Tomato Paste
2 (10oz) cans Rotell ( Diced Tomatoes with green chilies)
Fill the pot with water and simmer for at least 1 hour. ( I like to let it cook for a couple of hours to enhance the flavor)
Garnish the soup with:
Tortilla Strips
(You can make fried Tortilla strips by cutting Corn Tortillas into strips and frying in oil or make it easy and by a bag of Corn Chips)
Shredded Mozzarella Cheese
Chopped Avocado
and a dollop of Sour Cream
I also enjoy fresh lime juice for a little tangy flavor.
This is one of our favorite soups! Put your recipe is a little different than mine, so I will have to try it!

There is nothing better than soup on a cold winter's night (or luncheon for that matter). Your recipe sounds good and I will have to try it -- this is one of DH's favorites!

ReplyDeleteI have one suggestion for you. Your tutus are so cute, but you should also make them in adult sizes. Several of my readers are 20-something and I see them dress in tutus a lot. One had her pic taken with her friends and Santa at the local mall and, sure enough, she was wearing her tutu. She did a whole post recently on models wearing them. Just a suggestion, wishing you luck in your new endeavor!
I have never made this, but I'm putting it on my list. It looks like a wermer upper,perfect after the holidays. Love the garnishes! Have a great 2010!

Your soup looks so good with those big chunks of chicken! I like that you made it in the crock pot with deli roast chicken... easy is good. I also enjoyed your pretty snowy photos... no flakes here yet this year, but it is certainly cold enough! Welcome to blogging... it's fun and you meet so many nice people.
